When I started the 2B Mindset program I didn’t know that I would learn to love vegetables. Sure I liked vegetables but I always stayed with the ones I grew up knowing about. Then I saw the recipe I wanted to try because I really love Lasagna, well all Italian food just about. It was the Spaghetti Squash Lasagna recipe that made me say, “YES! I can do this.
To prepare, I went shopping for all the ingredients. I picked out two Spaghetti Squashes, just in case I messed up the first one. Rouses was a great spot to find what I needed. The fresh grated Mozzarella, the All-Natural Marinara, and the Ricotta Cheese.
Now I will tell you (if you are preparing Spaghetti Squash for the first time), is it has a tough skin. I had to look up online “How to Cut a Spaghetti Squash.” The answer, you have to make knife marks of where you expect to cut it. Then you heat it up in the microwave for about 5-minutes.
After, preparing each layer of goodness, I finally had a lasagna to put in the oven. Reminder: THE OVEN IS HOT. I burnt my wrist on the bottom of the convection oven I was using. You can use a regular oven but I didn’t want to use a lot of electricity.

Spaghetti Squash Lasagna
RECIPE
Ingredients:

- 1 SMALL SPAGHETTI SQUASH
- NON-STICK COOKING SPRAY
- 4 CUPS ALL-NATURAL MARINARA SAUCE
- 3 CUPS PART-SKIM RICOTTA CHEESE
- 1 CUP GRATED PARMESAN CHEESE
- 1/4 CUP FINELY CHOPPED FRESH BASIL (OPTIONAL)

- PREHEAT OVEN TO 375º F.
- LINE LARGE BAKING SHEET WITH PARCHMENT PAPER. SET ASIDE.
- CUT SPAGHETTI SQUASH IN HALF LENGTHWISE. REMOVE SEEDS AND MEMBRANE.
- PLACE SPAGHETTI SQUASH, CUT SIDE DOWN, ON A BAKING SHEET. BAKE FOR 40 TO 45 MINUTES, OR UNTIL TENDER.
- REDUCE OVEN TEMPERATURE TO 350º F.
- SCRAPE SPAGHETTI SQUASH FLESH INTO STRINGY NOODLES.
- LIGHTLY COAT 4-QUART BAKING DISH WITH SPRAY.
- EVENLY LAYER HALF SPAGHETTI SQUASH, HALF MARINARA SAUCE, AND HALF RICOTTA CHEESE IN BAKING DISH. REPEAT WITH THE SECOND LAYER.
- EVENLY TOP WITH PARMESAN CHEESE.
- BAKE FOR 30 TO 32 MINUTES, OR UNTIL GOLDEN BROWN AND BUBBLY.
- GARNISH WITH BASIL IF DESIRED.
